- One tablespoon. of olive oil
- Four medium carrots, chopped
- Two teaspoons of grated ginger
- One small onion, chopped

Preparation
- Heat the olive oil in a medium saucepan and add the onions.
- Cook on a gentle heat for 5 minutes. Do not allow them to go brown.
- Add the chopped carrots, grated ginger and chicken broth.
- Bring to the boil and then cover and simmer for about 15-20 minutes, or until the carrots are soft.
- Allow cooling to room temperature.
- Pour contents into your smoothie maker and blend for about 30 seconds or until smooth.
- Add more broth or hot water if required.
- Return contents to the saucepan and season if required.
- Heat gently and serve.
